Cherry and chorizo tapas

Combine casual Mediterranean spirit with fresh tasty cherries to enjoy this special summer treat.

Ingredients

  • 2 chorizo sausages
  • 1 clove garlic, crushed
  • 2 teaspoons olive oil
  • 1 teaspoon finely diced lemon rind
  • 1 tablespoon finely chopped continental parsley
  • 200g freshly pitted cherries (seeds removed)

Preparation

Cut the sausages into 1cm thick slices. Then heat the oil in a frying pan and gently cook them until crisp on both sides. When the sausages are cooked, add garlic, cherries, lemon rind and parsley. Quickly cook, stirring constantly. Serve immediately with slices of thick bread, a fresh crisp green salad with tomato wedges and other tapas dishes.
