Makes 2 cups
Ingredients:
- 2 eggs
- 250g or 1 cup sugar
- grated rind and juice of 2 lemons
- 1 tablespoon cornflour
- 60g butter
Method:
- Beat eggs in a large microwave-safe bowl or jug.
- Add sugar. Continue beating until very creamy.
- Add lemon rind, juice and cornflour. Mix well.
- Add butter.
- Microwave on high for three minutes.
- Stir.
- Microwave on medium two minutes.
- Stir until smooth.
- Cool slightly.
- Spoon into sterilised jars.
- Store in the refrigerator.
