Recipe: Microwaved lemon curd

Cooking: 5 minutes

Makes 2 cups

Ingredients:

  • 2 eggs
  • 250g or 1 cup sugar
  • grated rind and juice of 2 lemons
  • 1 tablespoon cornflour
  • 60g butter

Method:

  1. Beat eggs in a large microwave-safe bowl or jug.
  2. Add sugar. Continue beating until very creamy.
  3. Add lemon rind, juice and cornflour. Mix well.
  4. Add butter.
  5. Microwave on high for three minutes.
  6. Stir.
  7. Microwave on medium two minutes.
  8. Stir until smooth.
  9. Cool slightly.
  10. Spoon into sterilised jars.
  11. Store in the refrigerator.
